This is a summertime staple that should be in your recipe rotation! Over the years, we perfected this recipe at my catering company. My version of this gazpacho recipe has been made with all the flavor and wonderful texture of a traditional gazpacho recipe, without using bread or other higher-carb ingredients. The best part is that nobody has ever been able to tell that this recipe has been made completely low carb! Everyone just loves it!
