Yes. Cajun deviled eggs can be low-carb depending on the ingredients used to make the deviled egg filling. This recipe is low-carb as each egg contains less than 5 g of carbs. With its unmatched deliciousness, you will slurp hard and forget about the carb count.
Ingredients List For Cajun Shrimp Deviled Eggs Recipe
To make deviled eggs with shrimp you need the following simple ingredients:
- 12 large eggs
- ½ pound small to medium shrimp
- ¼ cup mayonnaise for creaminess
- 1 tablespoon Dijon mustard
- 1 teaspoon white vinegar
- 2 teaspoons Cajun seasoning
- Paprika, to taste
- Kosher salt to taste
- Pepper to taste
- Fresh parsley, finely chopped, for garnish

- White vinegar: Apple cider vinegar, red wine vinegar or freshly squeezed lemon wedge are superb alternatives. Avoid bottled lemon juice because of hidden sugars and very high acidity levels.

- Smoked Paprika or ground chipotle peppers: For spicy Cajun shrimp eggs, add some smoked paprika or chipotle peppers.
- Fresh herbs: Finely chopped chives or dill will add a dash of freshness.
- Dill pickles: These will add a good crunch and texture to the dish. Pickles can be overpowering if unbalanced, be careful with the portions.
- Toppings: Top the shrimp deviled eggs with crumbled bacon bits, finely diced jalapeno, green bell pepper, or poblano peppers. My homemade pickled jalapeno peppers are my favorite topping.

Preparation Steps
- Mix the paprika, garlic powder, onion powder, black pepper, cayenne pepper, oregano, and thyme. You will need 2 teaspoons of this mixture for the recipe.
- Place eggs in a pot and cover with water by 1 inch.
- Bring to a boil, then cover, remove from heat, and let stand for 12 minutes. Transfer to an ice water bath to cool. Peel once cooled.
- If using uncooked shrimp, give them a quick rinse, and boil for 2-3 minutes or until pink and opaque. Cool in cold water, then peel and devein.
- Keep one shrimp per egg whole for garnish; chop the rest and set aside.
Cooking/Assembly Steps
Make the Yolk Mixture
- Halve the cooled eggs lengthwise.
- Remove the yolks and add to a bowl; place the whites on a serving dish.
- Mash the yolks; mix in mayonnaise, Dijon mustard, 1 teaspoon cajun seasoning, and vinegar.
- Season with salt and pepper to taste.
- Fold in the chopped shrimp.
Fill the Eggs
- Spoon or pipe the yolk mixture into the egg whites.
Garnish
- Place the remaining whole shrimp in a bowl.
- Add the remaining teaspoon of Cajun seasoning.
- Coat well and place 1 shrimp on each deviled egg.

💡 My Pro Tip
I haven't had the best experience using piping bags for this recipe. They are such a pain to clean. Plus, since the recipe has shrimp in it, you have to adjust the size opening for them to fit when filling.
My preferred method is to fill a zip-top bag with the egg mixture, push it to one corner, and carefully cut the tip off the corner.
Squeeze the bag and observe how the egg yolk filling moves. If the shrimp are getting caught, make a slight cut at the opening and try again. Soon, you will be filling the deviled eggs with ease. When you are done toss the bag into the garbage. Eazy peazy! No cleanup is needed.
⏲️ Time-Saving Tips
Be Efficient
- Use precooked and cleaned shrimp. They will massively reduce your cooking time. In addition to being cooked properly, they are well-cleaned and deveined.
- Use store-bought hardboiled eggs. You can find perfectly cooked, hard-boiled eggs in the store. No need to remove shells.
Stress-free Cooking/Assembly
- For convenience, prep everything a few days in advance. Store the yolk and egg white in a container with plastic wrap and refrigerate until you are ready to assemble the recipe.
Note: The egg whites may get a bit of condensation on them in the fridge. Wipe them with a paper towel before filling them with the yolk mixture.
