These Crispy Baked Zucchini Fries are so good my whole family snaps them right off the baking sheet! I found the perfect way to make them crispy in the oven without coating them in panko.

This easy baked zucchini fries is as easy as one-two-three!

Gather up all the ingredients needed for the zucchini fries. If you can’t find mini-zucchini, get small size zucchini and slice into small sticks.

Lay the zucchini cut side down first in a hot skillet to begin the caramelization process. After several minutes, add in the minced onions. This is the way to get crispy zucchini fries!

Add the zucchini fries cut side up to a lined baking sheet. Evenly layer on the onions, spray some balsamic vinegar and sprinkle liberally with parmesan. Delicious!
