In just 3 simple steps, you'll be enjoying this crispy sweet potato recipe!
Almost to the 375 degree mark. Anything less will give us soggy french fries. Use a candy thermometer and make sure it doesn’t touch the bottom of the pan!
Cook for 1 minute and 25 seconds. Make your sweet potato fries in small batches. The oil will expand when the sweet potato is added, so don’t just throw them in the pot- it will boil over!
Pull the fries out of the hot oil using a metal spider. Drip the oil on a rack over a rimmed baking sheet or place on paper towels.
Wash the potato and completely dry it before use. Water and hot oil don't play well together.
