Start the gastrique to make the bacon fat dressing. It's a mixture of sugar (or honey) and vinegar.
After the gastrique has reduced by about half, add in the whole grain mustard. I'm using ancient mustard for mild taste!
Mix the mustard well.
Add in the bacon fat and cook over medium-high heat to your desired consistency.
Slow render the bacon to make lardons.
