2 heads Frisee lettuce ½ LB Slab Bacon 4 Eggs 1 tbsp White Wine Vinegar ¼ cup White Wine Vinegar 1 tbsp Raw Honey 1 tbsp Whole Grain Mustard ½ cup Rendered Bacon Fat

Step 1

Start the gastrique to make the bacon fat dressing. It's a mixture of sugar (or honey) and vinegar.

Step 2

After the gastrique has reduced by about half, add in the whole grain mustard. I'm using ancient mustard for mild taste!

Step 3

Mix the mustard well.

Step 4

Add in the bacon fat and cook over medium-high heat to your desired consistency.

Step 5

Slow render the bacon to make lardons.

Step 6

Poach the eggs with boiling water and a bit of vinegar. Bring it all together and enjoy while hot!
