– 2 lamb rack, 1-1.5 pounds each – 2 tbsp Dijon mustard – 2 cloves of garlic, minced – 2 tbsp fresh rosemary sprigs – 1 shallot, finely chopped – 2 tbsp clarified butter – 1 tbsp fresh thyme leaves – 1 tsp Kosher salt – ¼ tsp freshly ground black pepper
