Step 1

Prep the chicken. Remove giblets, rinse the chicken, and pat it completely dry. Tie the chicken.

Step 2

Lemon. Add the quartered lemons into the chicken cavity.

Step 3

Rosemary. Add a handful of fresh rosemary.

Step 4

Thyme. Add the thyme including the stems.

Step 5

Salt. Salt the chicken skin and tighten the skewer to keep the chicken even.

Step 6

Cook the chicken. Cook the chicken in the rotisserie until thigh meat temperature reaches 165°F.
