Buy high-quality bacon slab. Check on your local butcher if they have smoked and cured pork belly.
Cut the bacon into batons. Cut bacons about ½″ wide.
Cook bacon bits. Cook bacon for 20 minutes on low heat. The pork fat is rendering and the lardon are starting to brown.
Brown the lardons. Continue cooking until nicely brown.
