8 Cups Beef Stock, 2 quarts 2 Smoked Ham Shanks 1 tablespoon Olive Oil 2 Slices Smoked Bacon 2 Cups Chopped Onion, Spanish 4 Sprigs Fresh Thyme ¼ Cup Chopped Shallot 2 tablespoon Water 1 tablespoon Minced Garlic 1 LB Dried Split Peas 1 Bay Leaf ½ teaspoon Balsamic Vinegar

Preparing the split peas:

Split peas need a good rinse with water before cooking. Remove any grit from the split peas using a  colander.

Step 1

Make the soup base. Boil the beef stock and ham shank for a full hour and a half. Then, shred the meat before adding the spices  for the split pea soup.

Step 2

Sauté the spices. Cook the bacon until crisp and sauté the spices. Make sure to remove the thyme stems before adding the soup.

Step 3

Blend the soup. Blend the split pea soup until smooth. Then, add salt, pepper, and vinegar to taste. Adjust seasoning as needed and garnish with some ham before serving.

Quick Cooking Tip:

I heat the stock and the ham shanks together while I'm cooking the onions.  It gives the shanks a bit more time to soften up and adds more flavor to the recipe.
