SAUTEED ZUCCHINI

An easy and fresh take on sauteed zucchini with butter, fresh thyme and herbs de provence. Enjoy this with just about any roasted or sauteed meat of fish dish!

Ingredients

  • 2 Zucchini washed and sliced
  • 3 tablespoon Butter divided
  • 2 teaspoon Olive Oil divided
  • 2 teaspoon Herbs de Provence divided
  • 4 Sprigs Fresh Thyme
  • Kosher Salt
  • Fresh Cracked Pepper

Instructions

  • Warm a heavy bottom saute pan over medium-high heat. Add in 1.5 tablespoon butter and 1 teaspoon olive oil. When the butter has melted, add a single layer of zucchini into the pan. Add in 1 teaspoon of the Herbs de Provence and 2 sprigs thyme. Cover and cook for 5 minutes.
  • Uncover and flip the zucchini using tongs. It should be nicely browned. Once all the zucchini is flipped, cook another 5 minutes uncovered. When it is heated through, move to a bowl and cover with foil
  • Repeat the process with the remaining zucchini.
  • Serve hot and enjoy!

Notes

If you want, you can just all all the zucchini to the pan at one time. You will need to mix it up a little more and it will fall apart, but it will still taste delicious. Remember to remove the cooked zucchini from the pan while the remaining zucchini is still cooking.
