Sugar Free Peach Compote

The perfect balance of sweet and savory... just the right combination to make your mouth water! This recipe is a great accompaniment to grilled meats, cheeses and ice cream.

Ingredients

  • 3 Peaches Pitted & Halved
  • 1 Teaspoon Olive Oil
  • 4 Tablespoons Butter Unsalted
  • 1 Teaspoon Honey
  • 4 Sprigs Thyme
  • 1 Squeeze Lemon
  • 1 Pinch Kosher Salt
  • 1 Pinch Black Pepper

Instructions

  • Preheat your grill and oil the grate to prevent sticking.
  • Lay the peaches cut side up and lightly coat with the olive oil, some salt and pepper.

  • Grill the peaches for approximately 5-6 minutes. We are not going to cook them all the way through on the grill.

  • While the peaches are grilling, melt the butter in a pan over medium-high heat.
  • Remove the peaches from the grill and dice.
  • Add the peaches to the butter along with the thyme and honey. Cook for 5-7 minutes or until the peaches are softened and the sauce has thickened.

  • Sprinkle just a bit of lemon over the peaches and remove the thyme stalks before serving.

Notes

This recipe works great with pork, chicken or duck! Brie and other creamy cheeses also work well with the peach compote. If you have ice cream or plain yogurt on hand, the compote tastes great when mixed.
