– 1 LB Chorizo sausage – ½ Spanish Onion – 1 Fresno Chili – ½ Bell Pepper – 1 Tbsp Olive Oil – 1 Can Fire Roasted Tomatoes – 1 Clove Garlic – 1 Can Mild Green Chilis – ¾ Cup Cotija – 4 Eggs – 2 Tbsp Cilantro – 1 Tsp Kosher Salt – ½ Tsp Black Pepper

Step 1

Sautee the onions until translucent.

Step 2

Add in the peppers, chili, garlic, and a pinch of salt.

Step 3

Add in the can of diced green chilis. Stir.

Step 4

Add in the roasted tomatoes and season with salt and pepper.

Add the cooked chorizo back into the pan. Mix well.

Create 4-6 small wells.

Sprinkle the Cojita cheese, but this is optional.

Add the eggs to the wells.
