– 1 LB Chorizo sausage – ½ Spanish Onion – 1 Fresno Chili – ½ Bell Pepper – 1 Tbsp Olive Oil – 1 Can Fire Roasted Tomatoes – 1 Clove Garlic – 1 Can Mild Green Chilis – ¾ Cup Cotija – 4 Eggs – 2 Tbsp Cilantro – 1 Tsp Kosher Salt – ½ Tsp Black Pepper
