Step 1

Buy a delicious rotisserie chicken from your local store. Avoid buying flavored chicken—they don't blend well with our spices.

Step 2

Remove all the meat from the rotisserie chicken, taking care not to include any cartilage in the mix.

Safety Tip:

Use tongs or forks when handling the rotisserie chicken from the store. My fingers really take a beating around the chicken breasts if I try to shred the  chicken right away.

Step 3

Add all the ingredients to a large mixing bowl, including the chopped meat. Measure the ingredients so the flavors will be balanced.

Step 4

Chill the chicken salad in the refrigerator for a few minutes before serving. Squeeze fresh lemon juice over it just before serving.
