Layer the gluten free pie crust on a dish.
In a large mixing bowl, mix the whipped cream cheese and homemade whipped cream together until stiff peaks form.
Add the cream cheese mixture into the baked crust.
Add a thin layer of vanilla whipped cream on top of the cheesecake filling. Sprinkle some lemon zest.
