Score the pork belly skin. Make sure that the cuts do not go through the meat.
Season the pork belly.
Sear the pork belly in some duck fat to increase flavors.
Sear until golden brown.
Add the seared pork belly to a lined sheet pan on a rack. Add salt and pepper.
After 3 hours, add the herbs to the top of the pork belly. Enjoy!
