Spicy Roasted Broccolini (Baby Broccoli)

The perfect spicy side dish for any protein... whether grilled, sauteed or roasted. The spice is easily controlled by choice of pepper and amount of red pepper flakes. It's just so good.

Ingredients

  • 2 Bunches Baby Broccoli (broccolini)
  • 2 Anaheim Chilis Sliced
  • 1 Tablespoon Red Pepper Flakes
  • 3 Tablespoons Olive Oil
  • 1 Pinch Salt & Pepper
  • 1 Teaspoon Lime Juice Optional

Instructions

  • Preheat the oven to 400F 
  • Coat the broccolini with 1.5 tablespoons of olive oil along with a good pinch of salt and pepper.
  • Add the broccolini to a rimmed baking sheet.

  • In a bowl, add the peppers, pepper flakes and remaining olive oil. Add a pinch of salt and pepper. Mix well.

  • Layer the pepper mixture on the broccolini.

  • Roast for 25-30 minutes or until tender.

  • Transfer to a serving dish. If you would like, lightly sprinkle with some lime juice.

Notes

I happen to like the lime juice added to the spicy roasted broccolini. Some people have found it to be a bit off-putting... perhaps their bites had too much lime? I'm not quite sure but whenever I make this I sprinkle with lemon or lime.
If you have thick stalks on the broccolini, you should peel them so they don't get tough. If you don't want to peel them, you can either steam the broccolini for 5 minutes or blanch it. Nobody wants tough baby broccoli.
