Ingredients

  • 8 lamb chops
  • ¼ cup extra virgin olive oil
  • 1 tablespoon fresh rosemary minced
  • 2 cloves garlic minced
  • 1 teaspoon kosher salt
  • ¼ teaspoon pepper
  • 1 lemon sliced

Instructions

  • Step 1: Preheat the grill to medium-high.
  • Step 2: Place all the lamb chops on a plate or platter. Allow to come to room temperature while the grill is heating.
  • Step 3: In a small bowl, combine the olive oil, fresh rosemary, garlic, kosher salt, and pepper. Spoon half the mixture over the lamb chops.
  • Step 4: Add the lemon slices to the grill and cook for 1 minute. Then, add the lamb chops, seasoned side down. Spoon the remaining marinade over the chops and close the lid to the grill.
  • Step 5: Depending on thickness, it may take between 1-3 minutes per side. Be sure to flip and rotate the chops and the lemons to get nice grill marks.
  • Step 6: When the internal temperature of the lamb reaches 135°F (for medium-rare), they are ready to be removed from the grill. Allow them to rest, then squeeze some of the grilled lemon over the top and serve hot.

Lamb Chop Tips:
  • Having your lamb chops "Frenched" by the butcher means they will remove the meat from the rib bones, leaving a nice chop.
  • Leaving some of the fat on the chops enhances the flavor.
  • For an extra burst of flavor, consider marinating the chops for about 1 hour before grilling. Simply pour all the marinade into a bag with the chops. Remember to let the chops come to room temperature before cooking.
  • Ensuring your chops are at room temperature before grilling is crucial for even cooking.
  • Keep an eye on grill flare-ups. Direct flames can alter the taste of the chops, giving them a heavy lamb flavor.
