Ingredients

Blueberry Compote Ingredient List

  • 2-3 tablespoons monk fruit sweetener adjust according to taste and the sweetness of the berries
  • 2 cups fresh or frozen blueberries
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • A pinch of salt
  • Optional: 2 tablespoons water if needed, especially if using fresh berries

Instructions

Preparation Steps

  • Gather all the ingredients and tools for this recipe.
  • Combine the blueberries, lemon juice, lemon zest, monk fruit sweetener, and a pinch of salt in a medium saucepan. Add water if the mixture seems too dry or the berries are particularly tart.

Cooking Instructions

  • Place the saucepan over medium heat and bring the mixture to a simmer, stirring occasionally.
  • As the berries soften and burst, gently mash some of them with a fork or potato masher to release their juices and thicken the compote. This step is optional and based on your preferred texture.
  • Taste the compote and adjust the sweetness with additional monk fruit sweetener or add more lemon juice if needed.
  • Remove it from heat once the compote has reached your desired consistency (remember, it will thicken more as it cools). Let it cool before serving.
