Ingredients List For Cajun Shrimp Deviled Eggs Recipe
- 12 large eggs
- 1/2 pounds small to medium shrimp
- 1/4 cup mayonnaise for creaminess
- 1 tablespoon Dijon mustard
- 1 teaspoon white vinegar
- 2 teaspoons Cajun seasoning
- Paprika to taste
- Kosher salt to taste
- Pepper to taste
- Fresh parsley finely chopped, for garnish
For the Cajun Seasoning
- 1 tablespoon paprika
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon ground cayenne pepper
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
Preparation Steps
Mix the paprika, garlic powder, onion powder, black pepper, cayenne pepper, oregano, and thyme. You will need 2 teaspoons of this mixture for the recipe.
Place eggs in a pot and cover with water by 1 inch.
Bring to a boil, then cover, remove from heat, and let stand for 12 minutes. Transfer to an ice water bath to cool. Peel once cooled.
If using uncooked shrimp, give them a quick rinse, and boil for 2-3 minutes or until pink and opaque. Cool in cold water, then peel and devein.
Keep one shrimp per egg whole for garnish; chop the rest and set aside.
Cooking/Assembly Steps
Make the Yolk Mixture
Halve the cooled eggs lengthwise.
Remove the yolks and add to a bowl; place the whites on a serving dish.
Mash the yolks; mix in mayonnaise, Dijon mustard, 1 teaspoon cajun seasoning, and vinegar.
Season with salt and pepper to taste.
Fold in the chopped shrimp.
Fill the Eggs
Spoon or pipe the yolk mixture into the egg whites.
Garnish
Place the remaining whole shrimp in a bowl.
Add the remaining teaspoon of Cajun seasoning.
Coat well and place 1 shrimp on each deviled egg.
Sprinkle lightly with paprika and garnish with parsley.
