Ingredients

Cucumber Feta Salad Ingredient List

  • 12-15 leaves of fresh mint
  • 2 tablespoons olive oil
  • 1 cucumber sliced
  • 1 tablespoon apple cider vinegar
  • ½ shallot sliced finely
  • ½ cup feta cheese
  • ½ teaspoon dried oregano
  • ¼ teaspoon kosher salt
  • ¼ teaspoon fresh cracked black pepper

Instructions

Preparation Steps

  • Cut the cucumber into manageable lengths, then halve lengthwise.
  • Remove the seeds from the cucumber sections with a spoon and discard.
  • Slice the cucumber and peeled shallot thinly. Use a mandolin to get evenly thin slices.
  • Add the sliced cucumber and shallot to a bowl.
  • Crumble the feta cheese and add it to the bowl. Add the dried oregano, kosher salt, and fresh cracked pepper.
  • Add the apple cider vinegar and olive oil.
  • Mix gently with a rubber spatula to combine all the ingredients well.
  • Gently fold in the torn mint leaves.
  • Chill the salad before serving to enhance the flavors.
