Cucumber Feta Salad Ingredient List
- 12-15 leaves of fresh mint
- 2 tablespoons olive oil
- 1 cucumber sliced
- 1 tablespoon apple cider vinegar
- ½ shallot sliced finely
- ½ cup feta cheese
- ½ teaspoon dried oregano
- ¼ teaspoon kosher salt
- ¼ teaspoon fresh cracked black pepper
Preparation Steps
Cut the cucumber into manageable lengths, then halve lengthwise.
Remove the seeds from the cucumber sections with a spoon and discard.
Slice the cucumber and peeled shallot thinly. Use a mandolin to get evenly thin slices.
Add the sliced cucumber and shallot to a bowl.
Crumble the feta cheese and add it to the bowl. Add the dried oregano, kosher salt, and fresh cracked pepper.
Add the apple cider vinegar and olive oil.
Mix gently with a rubber spatula to combine all the ingredients well.
Gently fold in the torn mint leaves.
Chill the salad before serving to enhance the flavors.
