  • 4 1- pound thick-cut pork chops well-marbled
  • 1 tablespoon olive or other oil
  • 1 teaspoon kosher salt
  • ½ teaspoon fresh cracked black pepper

Instructions

Preparation Steps

  • Remove the chops from the refrigerator about an hour before cooking.
  • Gather all the ingredients in precise quantity.
  • Wash the pork chops.
  • Lightly coat with the oil and generously season with the salt and pepper.
  • When you're ready, turn the grill on high to get it nice and hot.

Cooking Instructions

  • Add the chops at a 45-degree angle to the grill grates. For thick-cut chops, cook for 4 minutes per side with each rotation on the grill.
  • After 4 minutes, rotate to the hot side of the grill. Check my pro tips to see how to vary the grill's temperature for great cooking results.
  • Check the temperature of the meat close to the bone or in the thickest part of the chop. The temperature for the thicker chops should register 145°F (62°C).
  • Remove from the grill, cover with foil and allow to rest for about 5 minutes.
  • Serve hot and enjoy.
