- 1 ripe avocado pitted and peeled
- 1 clove garlic minced
- ½ cup full-fat coconut milk or heavy cream for that keto richness
- ½ cup fresh cilantro stems removed
- Juice of 1 lime
- Salt and pepper to taste
- Optional: 1 small jalapeño seeds removed if you want to turn up the heat
Add all the ingredients to a food processor or blender.
Blend well to mix everything together.
Taste and adjust the seasoning.
If it's too thick, add a splash of water to reach your desired consistency.
- Avocado Ripeness: The creaminess of the dressing depends on how ripe the avocado is. Make sure to use a ripe, but not overripe, avocado for the best consistency and flavor. If you’re using an underripe avocado, this dressing will not taste good!
- Blending: If you don't have a high-speed blender, don’t worry. You can still get a smooth dressing by blending for an extra minute or two. I use a Nutribullet for all my salad dressings... I find that full-sized blenders get the good stuff stuck at the bottom.
- Lime Juice: Fresh is best, but if you're in a pinch, bottled lime juice works fine. Just be mindful that bottled varieties might be a tad more acidic and could contain sugar. If you want, Key Limes can work well in this recipe too.
- Taste as You Go: After blending, give it a quick taste. If it needs a bit more salt or a squeeze more lime, go ahead and adjust. Remember that a little bit can go a long way, so be judicious with additions.
- Storage: Store any leftovers in an airtight container in the fridge for up to 3 days. The avocado will brown over time, but a quick stir should freshen it up.
- Serving Suggestions: This dressing isn't just for salads. Try it as a dip for veggies, a spread for wraps, or even a sauce for grilled chicken. Want something really good? Try it on some grilled scallops… amazing!
