Cucumber Lemonade (Keto, Sugar Free, Low Carb)

Ingredients

  • 1/3 cucumber peeled and roughly chopped
  • ½ cup fresh lemon juice (about 3–4 lemons)
  • 3 cups water cold
  • ¼ cup mint leaves fresh and packed tight
  • ¼ cup erythritol
  • Ice for serving

Instructions

  • Add the cucumber, mint, lemon juice, sweetener and 1/2 of the water to a high-speed blender. Blend for 10-15 seconds or until smooth.
  • Add the remaining water and pulse once.
  • Chill for 20-25 minutes. This allows the solids to separate from the liquid.
  • Using a fine mesh strainer (I prefer a superfine strainer), strain the cucumber lemonade through the sieve into a pitcher.
  • Add ice to several glasses. Pour the cucumber mint lemonade over the ice and serve immediately.
  • It's optional, but you can garnish with fresh mint and a lemon wheel or cucumber ribbon for that extra summer vibe.

Notes

Please keep in mind that this recipe uses a blender to incorporate the natural sweetener. Other recipes have you heat the water over the stove and whisk in the sweetener. I find that the blender works better, there is no granulated sweetener remaining and the flavor is far superior to alternative methods.
 
Straining this recipe is required unless you want a mouthful of mint and cucumber pulp. Hey, to each their own, but I like my lemonade smooth and chilled.
