Have you been feeling the craving for some refreshing, chilled Cucumber Lemonade? Me too. That’s why I made this recipe because there’s almost nothing better than enjoying the sun, sipping on some delicious cucumber mint lemonade. Yes.

Is this Cucumber Mint Lemonade Recipe Low Carb?

Let me share with you the dirty little secret of lemonade made with traditional ingredients including refined sugar. Each serving has between 28 and 32g net carbs. You read that correctly. Now, the keto cucumber lemonade recipe that I have created for you has 2g net carbs per serving. How? Using low carb friendly ingredients, altering the recipe and straining out most of the solids. If you are on a clean keto diet, just 1 glass of traditional lemonade will be over the daily net carb limits. So, I say, have your low carb cucumber lemonade and enjoy it too.

Ingredients for Cucumber Lemonade:

  • Cucumber: I use a standard English cucumber for this recipe. I find that the flavor is more concentrated than the American cucumber. Why? The English cucumber has more concentrate flavor and brings with it a sweetness that the American cucumber just doesn’t have. Save the American cucumber for slicing in salads or pickling.
  • Lemons: please just use a standard lemon for this recipe. Meyer Lemons are delicious, but they are less acidic than other lemons. Please DO NOT use lemon juice from concentrate. It is FAR too acidic for this recipe.
  • Mint leaves: I use a standard mint leaf, but it needs to be fresh. Be sure to wash them thoroughly and avoid using the stems.
  • Natural sweetener: For this recipe, I’ve used granulated Erythritol. My suggestion is to taste the recipe after blending and adjust for sweetness. No refined sugar in this recipe
 

Ingredient Substitution Ideas:

  • Erythritol: I’ve experimented over the years with different natural sweeteners and these work well with either the cucumber lemonade or other sugar-free lemonade recipes: granulated allulose, granulated xylitol, granulated monkfruit sweetener blend. I really don’t like the flavor of raw stevia, so I don’t use it in my lemonade recipes.

How to make the Recipe for Cucumber Lemonade:

Step 1: Pour fresh lemon juice into the blender cup, then add the erythritol directly on top.

Ensure ingredients stay below the max fill line on your blender.

Step 2: Pour cold water into the blender until it reaches your desired fill level for blending.

Step 3: Attach the blender top and pulse a few times to dissolve the erythritol into the lemon water.

Step 4: Blend until the mixture looks evenly combined and lightly frothy.

Step 5: Open the blender and add in chopped cucumber and fresh mint leaves.

Step 6: Secure the lid and blend until the cucumber and mint are fully incorporated and broken down.

Step 7: Continue blending until the mixture turns vibrant green and smooth.

Step 9: Strain the mixture into a serving pitcher to remove pulp. Serve cold over ice.

💡 Scott’s Pro Tips:

  • Not all strainers are made the same. You can call it a sieve or a strainer, but there is a difference between a regular strainer and a superfine strainer. A regular strainer is going to allow for more pulp to transfer into the cucumber lemonade. Using a superfine strainer will result in a velvety, almost completely pulp-free mint cucumber lemonade. It’s up to you, but I find that the superfine strainer is worth the small expense. Find it above in the Equipment section of the post.
  • Why chilling time is important. There are a couple reasons chilling time is important for this recipe. The first is that cold lemonade is always better than room temperature. There’s just no contest. Second, by chilling the recipe before straining, the solids float to the top of the carafe of cucumber lemonade. This helps when straining the lemonade, so I always chill before straining.
  • Avoid over-blending. The idea of blending the cucumber lemonade is twofold. The first is to extract the flavor very quickly from the cucumber and mint. The second is to incorporate the granulated sweetener quickly without making a simply syrup. It doesn’t take long in the blender for these two things to happen. If you over blend, the lemonade takes on too much cucumber and mint flavor, overpowering the lemonade. Mix just enough.
 

📋 Cucumber Lemonade Recipe Variations:

  • Basil Cucumber Lemonade: Swap in 1/4 cup of fresh basil for the mint. The flavor is just amazing for those who don’t love mint or for anyone who is looking for an alternative lemonade recipe that hits the mark every time.
  • Sparkling Cucumber Lemonade: For this recipe, you will only add 1 cup of water to the blender with the other ingredients. Allow the mixture to chill and then strain into a pitcher. Add in 2 cups of sparkling water for an effervescent lemonade that is simply amazing. I love this recipe.

Storing the Homemade Lemonade Recipe:

To store: After the cucumber lemonade has been made, you can store it in the fridge in the pitcher for several days. Before serving, be sure to give it a good stir as the remaining solids from the cucumber or mint may settle to the bottom.

Please do not add ice cubes directly to the pitcher of lemonade. This will dilute the lemonade and if stored, will not taste great when served in the future.

  • 1/3 cucumber peeled and roughly chopped
  • ½ cup fresh lemon juice (about 3–4 lemons)
  • 3 cups water cold
  • ¼ cup mint leaves fresh and packed tight
  • ¼ cup erythritol
  • Ice for serving

Instructions

  • Add the cucumber, mint, lemon juice, sweetener and 1/2 of the water to a high-speed blender. Blend for 10-15 seconds or until smooth.
  • Add the remaining water and pulse once.
  • Chill for 20-25 minutes. This allows the solids to separate from the liquid.
  • Using a fine mesh strainer (I prefer a superfine strainer), strain the cucumber lemonade through the sieve into a pitcher.
  • Add ice to several glasses. Pour the cucumber mint lemonade over the ice and serve immediately.
  • It's optional, but you can garnish with fresh mint and a lemon wheel or cucumber ribbon for that extra summer vibe.

Notes

Please keep in mind that this recipe uses a blender to incorporate the natural sweetener. Other recipes have you heat the water over the stove and whisk in the sweetener. I find that the blender works better, there is no granulated sweetener remaining and the flavor is far superior to alternative methods.
 
Straining this recipe is required unless you want a mouthful of mint and cucumber pulp. Hey, to each their own, but I like my lemonade smooth and chilled.
