This Strawberry Coconut Smoothie Recipe is a special treat. Why? Because it tastes amazing. It's got a nice sweetness, a subtle coconut undertone and the punch of the strawberry and lime combination. There's never a drop spilled in this house. Let's take a look at how to make this breakfast smoothie in your kitchen.

Is this Coconut Smoothie Recipe Low Carb?

Ingredients for the Coconut Smoothie Recipe:
- Coconut milk. We want unsweetened and FULL fat.
- Ice
- Frozen berries (can be strawberries, blackberries, blueberries or raspberries)
- Coconut flakes. Look for unsweetened coconut flakes.
- Natural sweetener. You can use allulose (as I did in this recipe), stevia, xylitol, erythritol or a blended monkfruit sweetener.
- Lime juice and salt.
Ingredient Substitution Ideas:
- You could substitute almond milk for the coconut milk, but I'm not sure why anyone would.
- Frozen berries: As I mentioned above, you can stay in the berry family to keep things low-carb. If you're not low-carb, toss in a banana, too. It's just delicious.
- Lime juice: you can use lemon or even some freshly squeezed orange juice (it's only a tablespoon)... but the lime juice tastes best.

How to make a Coconut Milk Smoothie

Step 1: Add the ice and strawberries in the carafe of your Nutribullet or blender.

Step 2: Add in the natural sweetener and salt.

Step 3: Add in the lime juice.

Step 4: Time to add in the coconut milk.

Step 5: Take a moment to admire your work.

Step 6: Pulse five or six times to break up the ice and frozen strawberries. Continue to blend for another 30 seconds or until smooth.
💡 Scott's Pro Tips:
- Pulsing is important: we want to pulse to be able to break up the ice and frozen strawberries. The key is to listen to the blender after the pulse. If you hear a rattle inside, there are still big chunks of frozen stuff. Once they sound smaller, blend until the consistency is what you like.
- Reduce the carbs: want to reduce the overall carb count for this recipe? Great. Cut the strawberries to Β½ cup. Increase the natural sweetener to 2 tablespoons. Omit the coconut flakes. These changes take the NET CARB COUNT to 5g per serving. Mic drop.
- To salt or not to salt? The pinch of salt really brings this coconut smoothie together. You're just going to have to take my word for it. I've made this smoothie about 30 times and when I forget the salt, I know it. The balance is slightly off, and although I still smile while drinking it, my smile isn't as big as when it has a pinch of salt.
📋 Coconut Milk Smoothie Recipe Variations:
- Chocolate Strawberry Smoothie: with a name like this, you know it's going to be good. Add in 1 tablespoon of cocoa powder, Β½ teaspoon of vanilla extract and just for good measure... toss in 1 tablespoon of MCT oil. Taste and adjust for sweetness with natural sweetener.
- Triple Berry Coconut Smoothie: Use β cup each of frozen strawberries, blueberries and raspberries. Add in 1 tablespoon of chia seeds. Delicious.
- Nut Butter Coconut Smoothie: Keep the recipe the same as it is written in this post, but add in 2 tablespoons of almond or cashew butter. This will definitely increase the carb count, but some days it is just worth it!
Storing your Coconut Smoothie:
Here's the deal with storing a smoothie. It is "possible" but not advised to do it. Typically, smoothies are made to be consumed relatively quickly. When they are left in the refrigerator, the consistency is lost and they separate. When frozen, it's no longer a smoothie. So, let's just enjoy it fresh!

Yes. Particularly when they are low carb as they don't spike the glucose levels as much as a regular smoothie. A low carb smoothie uses coconut milk, natural sweeteners and whole fruits. There are no refined sugars or dairy products.
Coconut has a great, tropical flavor... so we want to pick fruits that are bright. Coconut pairs really well with strawberry, raspberry, blueberry, blackberry, pineapple, passion fruit, mango, guava, banana and kiwi. Keep in mind that citrus fruits should be used only to balance out the coconut flavor.
Coconut smoothies love to be paired with breakfast items like pancakes, crepes and waffles.

Strawberry Coconut Smoothie
Ingredients
- 1 Β½ cups coconut milk full fat and unsweetened
- 1 cup ice
- 1 cup frozen strawberries
- 2 tablespoons coconut flakes unsweetened
- 1 tablespoon allulose
- 1 tablespoon lime juice
- 1 pinch kosher salt
Instructions
- Add all of the ingredients to a blender or Nutribullet. Cover with the lid and pulse several times to break up the larger pieces.
- Blend continuously for about 1 minute, or until the mixture is smooth and creamy.
- Serve immediately and enjoy!

I've been making this smoothie for years and everyone loves it... it's a great way to get my teens fed and out the door without any arguments. They just take it and run!
