This simple Herbs de Provence Recipe uses fresh green olives, feta cheese and other Mediterranean inspired ingredients for a quick appetizer or snack that is ready in just minutes.

Is this Olive Herbs de Provence Recipe Low Carb?

You better believe it. This recipe has just .5g Net Carbs per serving… making it the perfect snack or appetizer for anyone on the low carb diet or the ketogenic diet. Snack away. And feel good about it today.

Ingredients for Herbes de Provence Recipe:

  • Green olives: I like using pitted green olives because the feta and herbes de Provence find their way into the nooks an crannies. If all you have is whole green olives, that works just fine too.
  • Feta cheese: If you want to save some time, buy the feta crumbles. It’ll save a couple minutes, but I think that they are more expensive than just doing it yourself.
  • Herbes de Provence: When I buy mine, I always look at the ingredients to ensure that there is NO lavender. I just don’t like the flavor of the herbes de Provence with Lavender. It’s a personal preference thing.
  • Red Pepper Flakes: This is more of an optional ingredient… but so tasty. I never make this recipe without the red pepper flakes, but some people just don’t like the heat.
 

Ingredient Substitution Ideas:

  • Green Olives: you can use Kalamata olives for this recipe or even black olives, but there won’t be as much flavor with black olives from a can.
  • Feta cheese: substitute goat cheese crumbles or even some crumbled cotija cheese. Yum.
  • Olive Oil: I’ve substituted with avocado oil in the past with zero issues. It tastes just as good.

How to make Herbes de Provence Recipe Recipe

Step 1: In a mixing bowl, add the olives.

Step 2: Add all the remaining ingredients except for the olive oil.

Step 4: Stir gently and allow the flavors to come together for about 20 minutes.

💡 Scott’s Pro Tips:

  • I’ve found over the years that if you want a “cleaner” look to your olives to mix together all the ingredients except the olives and olive oil first. Then gently fold in the olives and pour the oil in last. It makes a nice presentation, but the flavor is exactly the same as the method described in the recipe.
  • The longer this has a chance to marinate, the better. I find that these are particularly tasty the second and third day… all the flavors have had a chance to open up and the dried Herbs de Provence are soft and delicious.
  • Experiment with different flavor profiles. If you like shallots, add some of those. Garlic? Try some of my Roasted Garlic in your next batch… it is delicious! Anything Mediterranean really goes well with these olives.

Storing Olives Made with Herbs de Provence:

To store: As with most of my recipes, start first by adding the olives to an airtight container and tossing them into the fridge. They will last about a week with ease. Enjoy them every now and again for a snack!

  • 1 ½ cups pitted green olives Castelvetrano or similar
  • ½ cup feta cheese crumbled or cubed
  • 2 tsp Herbs de Provence
  • 1/4 cup extra virgin olive oil
  • Zest of ½ lemon
  • ¼ tsp red pepper flakes

Instructions

  • Add the olives and feta to a medium mixing bowl.
  • Sprinkle in the herbes de Provence, lemon zest, and red pepper flakes.
  • Drizzle with olive oil and toss gently to combine.
  • Let the mixture rest for 15–30 minutes at room temperature to allow the flavors to marry.
  • Serve as a stand-alone appetizer or with cucumber slices, radishes, or keto crackers.

Notes

This recipe can get a little messy if you leave it out for people to grab with their fingers. I always set out a small jar with toothpicks... just as an idea!
