- 1 ½ cups pitted green olives Castelvetrano or similar
- ½ cup feta cheese crumbled or cubed
- 2 tsp Herbs de Provence
- 1/4 cup extra virgin olive oil
- Zest of ½ lemon
- ¼ tsp red pepper flakes
Add the olives and feta to a medium mixing bowl.
Sprinkle in the herbes de Provence, lemon zest, and red pepper flakes.
Drizzle with olive oil and toss gently to combine.
Let the mixture rest for 15–30 minutes at room temperature to allow the flavors to marry.
Serve as a stand-alone appetizer or with cucumber slices, radishes, or keto crackers.
This recipe can get a little messy if you leave it out for people to grab with their fingers. I always set out a small jar with toothpicks... just as an idea!
