For the Chicken:
- 4 cups rotisserie chicken finely shredded
- 1 bottle hot sauce 12oz bottle (Franks or Tabasco)
- 2 tablespoons butter
- 1 teaspoon yellow mustard
For the Dip:
- 8 oz cream cheese softened
- 1 cup cheddar cheese shredded and divided
- 1/2 cup celery finely chopped
- 1/2 cup sour cream
- 1/4 cup green onion finely chopped
- 1 tablespoon chives dried
Preheat the oven to 350°F (180°C) and grease a 9x9-inch ovenproof casserole dish.
In a saucepan large enough to hold the chicken, add the hot sauce, butter, and yellow mustard. Whisk over medium heat until the butter melts and the mixture is smooth and emulsified.
Add the shredded chicken and stir well, cooking until the chicken absorbs most of the sauce. Remove the pan from the heat and let the chicken cool for 5 minutes.
In a large mixing bowl, combine the cream cheese, 1/2 cup of the shredded cheddar cheese, celery, sour cream, green onion, and dried chives. Once the chicken has cooled slightly, add it to the bowl and gently mix until combined.
Transfer the chicken mixture to the prepared casserole dish, using a silicone spatula to spread it evenly. Sprinkle the remaining 1/2 cup of cheddar cheese over the top.
Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and bubbly.
Remove from the oven and allow the dip to cool for 10 minutes before serving. This resting time helps the dip firm up for easier scooping.
