Ingredients for my Dip for Game Day Recipe:

  • Rotisserie Chicken, finely shredded
  • Hot sauce, preferably Frank's Red Hot
  • Butter
  • Yellow Mustard
  • Cream Cheese
  • Cheddar Cheese, shredded
  • Celery
  • Sour Cream
  • Green Onion
  • Dried Chives

Ingredient Substitute Ideas:

  • Rotisserie Chicken: if you don't want to deal with rotisserie chicken, really any cooked and shredded chicken will work. Check out my recipe for Easy Shredded Chicken too... so good and so easy.
  • Frank's Red Hot: you can use traditional Tabasco, but it doesn't taste as good.
  • Yellow Mustard: I would only use yellow mustard for this recipe as brown mustard, or Dijon does not round out the flavor correctly.
  • Cheddar cheese: any good melting cheese will work. You want those cheese strands that make everyone's mouth water!
  • Green onion: Use fresh chives if that's all you have on hand.
  • Dried chives: if you want, use fresh chives or freshly sliced green onion. I like the dried ones because they absorb some of the moisture from the other ingredients.

How to make my Game Day Cheese Dip Recipe

Step 1: Pour hot sauce into a saucepan placed over medium heat, forming the base for the chicken mixture.

Step 2: Add butter and yellow mustard to the hot sauce in the saucepan. Begin stirring as the ingredients melt and combine.

Step 3: Whisk the mixture until fully emulsified and smooth. Let it simmer lightly.

Step 4: Add the shredded rotisserie chicken to the saucepan. Toss the chicken in the sauce until it absorbs most of the liquid.

Step 5: In a large mixing bowl, add cream cheese, ½ cup of shredded cheddar cheese, celery, green onion, sour cream, and dried chives.

Step 6: Mix the ingredients in the bowl until well combined, creating a creamy and flavorful base.

Step 7: Add the saucy shredded chicken mixture to the bowl with the cream cheese mixture. Gently fold the chicken in until thoroughly incorporated.

Step 8: Transfer the combined dip mixture to an ovenproof dish. Smooth the top with a spatula, preparing it for baking.

Step 9: Sprinkle the remaining shredded cheddar cheese evenly over the top of the dip for a gooey and golden finish. It's now ready for the oven.

💡 Scott's Pro Tips:

  • Rotisserie chicken is not only easy and fast to use, it typically imparts some truly wonderful flavor into the dip as well. I've made this with boiled chicken breasts and the flavor just isn't as rich.
  • You can make this dip ahead of time. Once it has cooled to room temperature, it stores beautifully for about a week. Just take it out an hour before you're ready to serve and heat in the oven according to the recipe below.

📋 Game Day Dip Recipe Variations:

  • Add some heat: Typically, I always bring two of these dishes when we are invited to watch football at our friends houses. One is the standard game day dip recipe, and the other has more heat. I add in ½ teaspoon of crushed red pepper flakes and about ¼ teaspoon of ground cayenne. So spicy and delicious. Bring some sour cream to balance it out.
  • Change the cheeses: Add in some Monterey jack for even more cheesy deliciousness. I've changed the flavor profile in the past by adding in some smoked gouda... it just gives it that hint of smoke that tastes so good.
  • Serving suggestions: If you're low carb or keto, be sure to bring plenty of sliced celery, sliced cucumber, sliced red peppers or keto-friendly crackers for dipping. If you're not low carb or keto, this works great on some crunchy bread or on crackers.

Storing the Game Day Dip Recipe:

To store: Once the dip has reached room temperature, place it in an airtight container and refrigerate for up to a week.

To reheat: The best way to reheat the game day dip is to put it into an oven safe container and warm it at 350°F until heated through. It does not reheat well on the stovetop or in the microwave.

To freeze: Sure, go ahead and toss it into a freezer-safe container. It will be maintained in the freezer for six to nine months. To serve again, thaw in the fridge overnight and then reheat according to the instructions above.

Ingredients

For the Chicken:

  • 4 cups rotisserie chicken finely shredded
  • 1 bottle hot sauce 12oz bottle (Franks or Tabasco)
  • 2 tablespoons butter
  • 1 teaspoon yellow mustard

For the Dip:

  • 8 oz cream cheese softened
  • 1 cup cheddar cheese shredded and divided
  • ½ cup celery finely chopped
  • ½ cup sour cream
  • ¼ cup green onion finely chopped
  • 1 tablespoon chives dried

Instructions

  • Preheat the oven to 350°F (180°C) and grease a 9x9-inch ovenproof casserole dish.
  • In a saucepan large enough to hold the chicken, add the hot sauce, butter, and yellow mustard. Whisk over medium heat until the butter melts and the mixture is smooth and emulsified.
  • Add the shredded chicken and stir well, cooking until the chicken absorbs most of the sauce. Remove the pan from the heat and let the chicken cool for 5 minutes.
  • In a large mixing bowl, combine the cream cheese, ½ cup of the shredded cheddar cheese, celery, sour cream, green onion, and dried chives. Once the chicken has cooled slightly, add it to the bowl and gently mix until combined.
  • Transfer the chicken mixture to the prepared casserole dish, using a silicone spatula to spread it evenly. Sprinkle the remaining ½ cup of cheddar cheese over the top.
  • Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and bubbly.
  • Remove from the oven and allow the dip to cool for 10 minutes before serving. This resting time helps the dip firm up for easier scooping.

If you want to really give this recipe some juice, add in 1 teaspoon of dried Ranch Dressing seasoning...
