How To Prepare Chicken Wings Like A Pro

Equipment

  • Sturdy cutting board
  • Sharp knife (a boning knife is recommended, but a utility or chef knife will also work)
  • Baking sheet

Instructions

Step 1: Lay the Wing Flat

  • Place the chicken wing flat on your cutting board. Make sure it is stable to avoid any slipping while cutting.

Step 2: Locate the Joint Between the Drumette and Flat

  • Feel for the joint between the drumette (the meatier part) and the flat (the middle section). The joint is a softer spot where the bones meet.

Step 3: Slice Through the Joint

  • Using a sharp knife, slice through the joint. Apply firm pressure to cut cleanly through the cartilage connecting the drumette and flat.

Step 4: Find the Joint Between the Flat and Tip

  • If your wing has a tip, locate the joint between the flat and the tip. Feel for the softer area where the bones connect.

Step 5: Slice Through and Remove the Tip

  • Cut through the joint to remove the wingtip. This part is often discarded, but you can save it to make stock if desired.

Step 6: Trim Feathers and Excess Skin

  • After separating the wing sections, inspect them for any remaining feathers and excess skin. Use your knife to trim these off.

Step 7: Remove Skin Flap from the Flat

  • On the flat section, there is often a flap of skin on the leading edge. Gently pull it and use your knife to remove it for a cleaner presentation.
  • By following these steps, you will have neatly prepared chicken wings ready for cooking.
