Ingredients

Spicy Pickled Eggs Ingredients

  • 12 hardboiled eggs peeled
  • 2 cloves garlic peeled and slightly crushed
  • 2 jalapeƱo peppers sliced (remove seeds for less heat)
  • 1 cup white wine vinegar
  • 1 cup water
  • 1 tablespoon red pepper flakes adjust based on your heat preference
  • 1 tablespoon salt
  • 2 teaspoons erythritol or another keto-friendly sugar substitute
  • 1 teaspoon coriander seeds

Instructions

Preparation Method

  • Gather the tools and ingredients. Measure the ingredients.
  • Wash and slice the jalapeno peppers. Remove the seeds for less heat.
  • Peel and crush the garlic.

Cooking Instructions

  • Boil the eggs for 9-12 minutes. Remove and place in ice-cold water. Once cooled, remove and peel.
  • Mix the white wine vinegar, water, salt, sugar substitute, red pepper flakes, jalapeƱo slices, cumin seeds, and garlic in a saucepan. Heat the pickling mixture on medium, stirring until the salt and sugar substitute dissolve.
  • Place the eggs in a large, clean jar and pour the hot vinegar mixture over them, ensuring they're fully submerged. Add a bit more water if necessary.
  • Allow the jar to cool to room temperature, and then seal it and refrigerate. Wait at least 24 hours for the flavors to meld before devouring.
