Ingredients

BLT Tomato Bites Ingredients List

  • 15-20 ripe cherry tomatoes seeded
  • 6 large eggs hard-boiled and peeled
  • 3 pieces cooked crunchy bacon, finely minced
  • β…“ cup of mayonnaise
  • β…“ cup romaine chiffonade
  • 1 tablespoon finely minced chives plus extra for plating
  • 1 teaspoon Dijon mustard
  • Β½ teaspoon kosher salt
  • ΒΌ teaspoon fresh cracked black pepper

Instructions

Preparation Steps

  • If you are not using store-bought hard-boiled eggs, hard boil the eggs, peel the shells, and add them to a bowl.
  • Add the creamy mayonnaise and mustard to the bowl. Use a potato masher to combine all the ingredients, or smash with a fork if a potato masher isn't available.
  • Incorporate the bacon pieces, chives, romaine, salt, and pepper. Mix well and taste, adjusting seasoning as needed.
  • Transfer the BLT tomato mixture to a zip-lock freezer bag. Push the mixture to one of the corners and cut about a ΒΌ inch piece of the bag with scissors to create a piping bag. Place in the refrigerator while preparing the tomatoes.

Preparing the Tomatoes

  • Wash the tomatoes.
  • Slice off a tiny bit from the bottom of each tomato so it will stand up on its own.
  • Using a strawberry huller or a small knife, remove the stem and hollow out the insides of the tomatoes.

Finishing the Appetizer

  • Remove the piping bag from the refrigerator.
  • Fill each tomato with the BLT mixture.
  • Top with extra chives or finely minced scallions for garnish.
