Ingredients

  • 1.5 cups coconut milk full fat and chilled
  • 1 cup heavy whipping cream
  • 4 large eggs pasteurized if that makes you feel better
  • ½ cup erythritol powdered
  • 1 teaspoon rum extract
  • 1 teaspoon vanilla extract
  • ¼ teaspoon nutmeg shaved or ground
  • ¼ teaspoon cinnamon ground
  • 1 pinch kosher salt

Instructions

  • Pour all the ingredients into a blender and secure the lid tightly.
  • Begin blending on a low setting, then gradually increase to high speed. Watch as the eggnog fluffs up and expands—make sure your blender has enough capacity!

Notes

Alcohol Note: if you want to use rum in this recipe, you must omit the rum extract. They do not play well together. Start by adding in 1/2 cup of rum and adjusting from there. 
 
Blender Note: This recipe will not work if you are using a Nutribullet. The carafe doesn't have enough room for the eggnog to expand and thicken, and the mixture will be very liquid, even with the largest carafe. Using a full-sized blender is the best way to make this recipe.
