Is Sugar-Free Egg Nog Low Carb?

One serving of my sugar-free eggnog recipe has less than 3g net carbs! I’ve created this recipe using all low carb ingredients so anyone can enjoy this recipe during the holiday season and stay within their daily carb allotment. Keep in mind that one serving of traditional eggnog (made with refined sugar and whole milk) has around 38g net carbs. What a difference! Enjoy your keto eggnog this holiday season!

Sugar-Free Eggnog Ingredient List

1.5 cups coconut milk, full fat and chilled
1 cup heavy whipping cream
4 large eggs, pasteurized if that makes you feel better
½ cup erythritol, powdered
1 teaspoon rum extract
1 teaspoon vanilla extract
¼ teaspoon nutmeg, shaved or ground
¼ teaspoon cinnamon, ground
1 pinch kosher salt

Ingredient Substitutions

  • Powdered erythritol: you could use powdered allulose, powdered xylitol or powdered monkfruit sweetener (an erythritol blend) in about the same ratio. You may need to play with it a bit. If you don’t have the powdered versions, you can use granulated but might have a more granular taste in your sugar free eggnog.
  • Rum extract: this is a completely optional ingredient. If you don’t use it, the eggnog will still taste great. If you want to use actual rum, toss in about ½ cup to start and then adjust to your taste.
  • Vanilla extract: normally I would say that you can substitute vanilla powder in a 1:1 ratio, but for this recipe the extract is really necessary. You can augment the vanilla flavor with some vanilla powder, however.

Additional Ingredients

  • Keto whipped cream: adding this as a topper is a fantastic way to make something decadent into an over-the-top delight. For a real treat, add in ¼ teaspoon of the rum extract to the keto whipped cream recipe. So good.

How to Make Low Carb Eggnog: the Complete Cooking Guide

Although there are recipes out there for low carb or keto eggnog that require cooking, I wanted to create a fast recipe that makes delicious eggnog. That’s why we are only going to blend the ingredients. It’s quick, easy, and delightful.

  • No cook

Preparation Steps:

  1. Add all of the ingredients to a blender and cover with the lid.
  2. Start blending on low speed and increase to the fastest speed. You will see the volume of the eggnog increase significantly, so be sure your blender is large enough!
 

NOTE: I have tried to make this recipe in the Nutribullet, and even with the largest carafe, there is not enough room for expansion. The eggnog is thin and runny rather than thick and delicious.

💡 My Pro Tip

Many people worry about using raw eggs in recipes, and it's a valid concern. I’ve been cooking with raw eggs for over 30 years without any issues, but if you’re hesitant, pasteurized eggs are a great solution. These eggs are gently heated to eliminate harmful bacteria like Salmonella, making them much safer for recipes that call for raw or lightly cooked eggs. This way, you can enjoy your favorite dishes with greater peace of mind.

Disclaimer: Consuming raw or undercooked eggs may increase the risk of foodborne illness, especially for those with weakened immune systems. 

⏲️ Time-Saving Tips

  • Make ahead: if you’re planning on having people over for a holiday gathering, you can make a batch or two of this yummy keto eggnog ahead of time. Just make it, pour into a pitcher and cover with some plastic wrap. I would only make this an hour or two in advance, however, due to the raw eggs. Be sure to keep refrigerated while storing.
  • Make multiple batches: if your holiday gathering has more than six people who will be enjoying this sugar-free eggnog, you are going to need more than one batch. Because this recipe expands so much in the blender, it is not possible to double the batch. Instead, making multiple batches is the best way to make more!

  • Keto brownies: These are rich, delicious brownies that are low in carbs and the perfect sweet treat.
  • Chocolate covered strawberries: One of my absolute favorite recipes... we make a 100% dark chocolate ganache that tastes so good with the fresh, juicy strawberries. Yum!
  • Low Carb Pumpkin Pie: All the flavor, none of the carbs. Nobody (and I mean nobody) will ever know that this is a low carb pumpkin pie. Yes, it is that good.

The shelf life of this sugar-free egg nog recipe is quite short. As I mentioned in the time-saving tips section, I would only store this recipe for several hours rather than days. Let’s take a look at how to store this recipe.

Storing this Easy Low Carb Eggnog Recipe

  • Once you have made the low sugar eggnog, transfer it to a pitcher covered in plastic or to an airtight container. I would only store this recipe for several hours in the refrigerator due to the raw ingredients. Additionally, as the eggnog rests longer than several hours, you will notice that it starts to turn flat. Nobody wants a flat or runny eggnog. This recipe is best made and served relatively quickly or discarded.

Freezing Tips:

  • I would not freeze this recipe. There is no easy way to thaw with the raw ingredients.

Recipe Conclusion

I can still remember the first time I tried eggnog, right from the skinny cardboard container from the grocery store. That was probably 35 years ago or more. That first taste is indelibly imprinted in my sense memory thought. I just remember falling in love with the rich and creamy flavor.

Since then, I’ve made it a point to have at least some eggnog for myself every Christmas since not everyone enjoys this yummy drink. When I started my low-carb and keto diet in 2017, it was the first year without eggnog at Christmas, and it really bummed me out.

Notes

Alcohol Note: if you want to use rum in this recipe, you must omit the rum extract. They do not play well together. Start by adding in ½ cup of rum and adjusting from there. 
 
Blender Note: This recipe will not work if you are using a Nutribullet. The carafe doesn't have enough room for the eggnog to expand and thicken, and the mixture will be very liquid, even with the largest carafe. Using a full-sized blender is the best way to make this recipe.
