As I made waffles for my family every weekend, I watched them dig into each bite- topped generously with luscious whipped cream. There I was, feeling left out with my mouth watering.
Step one was to perfect my own keto waffles recipe. I completed that and moved to step two: the whipped cream. I wanted creamy, soft peaks of whipped cream on my plate of waffles and I wanted it all to be square with a ketogenic diet.
It became clear that the key lay in exploring various keto-friendly sweeteners. After several trials, tweaking, and tasting, I finally created a recipe that hit all the right notes – creamy, sweet, and lacking those different flavors some sweeteners add to recipes.
This recipe was created to replicate regular whipped cream and to enjoy it without worrying about messing up my low carb diet. Now, I'm not just the cook on our waffle weekends, but am part of the action.
Is this Keto Whipped Cream Low Carb?
Absolutely! This Keto Whipped Cream has been created to fit into a low carb lifestyle. Traditional whipped cream, while seemingly innocent, typically has added sugars that aren't in line with the keto diet.
I've made this recipe with keto-friendly sweeteners like erythritol, monk fruit and stevia. Monk fruit is my favorite sweetener, which is why I'm using that in the recipe today. Each provides a nice level of sweetness without the added carbs found in regular sugar. Additionally, the heavy whipping cream used as the base is naturally low in carbs and a great source of fat, aligning perfectly with keto principles.
Keep in mind, it is all about moderation. So, whether you're topping those morning keto pancakes, afternoon berries, or your favorite keto desserts, this whipped cream is an excellent choice for keeping your meals both delicious and keto-compliant with a healthy dose of moderation.
The Ingredients for Keto Whipped Cream
Creating the perfect Keto Whipped Cream involves a simple yet precise combination of ingredients, each playing a crucial role in achieving the desired taste and texture:
Heavy Whipping Cream: The foundation of our whipped cream, heavy whipping cream is high in healthy fats and low in carbs, making it ideal for keto. It whips up beautifully to create that signature fluffy and airy texture we all love in whipped cream. We are looking for cream with the highest fat content we can find... no half and half or Vitamin D milk.
Keto-Friendly Sweetener (Erythritol, Monk Fruit or Stevia): To add sweetness without the carbs, use keto-friendly sweeteners. These sweeteners mimic the sweetness of sugar without the high carb content, and they don't raise blood sugar levels, aligning perfectly with keto dietary needs. I do not use artificial sweeteners, so you'll have to do some experimenting if you want to use those.
Vanilla Extract: A dash of vanilla extract enhances the overall flavor of the whipped cream, adding a subtle aroma and depth that complements the creaminess. It's a small but essential ingredient that rounds out the flavor profile. If you're looking to avoid the alcohol, use some powdered vanilla or vanilla bean paste. Just be sure to check for added sugars.

Soft Peaks or Stiff Peaks for Keto Whipped Cream?
Whether you whip your keto cream to soft or stiff peaks depends on your preference and how you plan to use it. Soft peaks are perfect for a light, airy texture that's great for dolloping on desserts. Stiff peaks, on the other hand, are ideal if you want the whipped cream to hold its shape for a longer time, like for cake toppings or intricate dessert designs. Just be careful not to over-whip, as it can turn your cream into butter.
Can I use coconut cream instead of heavy cream?
Yes, coconut cream is a fantastic alternative for heavy cream in keto whipped cream, especially if you're dairy-free or looking for a different flavor profile. It whips up nicely and offers a hint of tropical taste. Keep in mind that coconut cream is a bit denser than heavy cream, so the texture may vary slightly. Please note: coconut cream is different than a can of coconut milk! Coconut milk will not whip well.

PRO TIP: If you only have granulated sweetener, toss it in the food processor for a bit and it will be powdered in no time!
For a hint of extra flavor, a splash of vanilla extract works wonders. Now, the fun part – whipping! Using either a hand mixer or a stand mixer, start at a low speed and gradually increase it for best results. Watch as the cream transforms, first to soft peaks – ideal for a lighter texture, then to stiff peaks if you need it to hold its shape.
Just remember to stop before it turns into butter. In just a few minutes, you'll have a luscious, creamy Keto Whipped Cream ready to top off your favorite low carb desserts or a bowl of fresh berries.

Is a stand mixer or hand mixer better for keto whipped cream?
Both stand and hand mixers are great for making keto whipped cream. A stand mixer is more hands-off and can handle larger batches easily, while a hand mixer offers more control and is perfect for smaller quantities. The key is to start with everything chilled well, begin the process at a lower speed and gradually increase it to avoid over-whipping.
A big mistake a lot of people have made over the years is to start the mixer at high speed. It creates a mess at best, and doesn't result in next level whipped cream at worst.
What if I get a grainy texture with my keto whipped cream?
A grainy texture usually happens if the sweetener hasn't dissolved properly. To avoid this, use powdered sweeteners instead of a granulated sugar substitute as they dissolve more easily. If you find the texture is still grainy, gently re-whip the cream to smooth it out, or let it sit for a short time to allow the sweetener to dissolve fully.
STORING YOUR WHIPPED CREAM
STORAGE: Storing your Whipped Cream is simple but essential to maintain its quality. The best way to keep this delightful topping is in the refrigerator. After preparing, transfer the whipped cream to an airtight container. It will stay fresh and hold its texture for about 2-3 days. Just give it a gentle stir before using if it separates slightly.
Keep in mind that it is CREAM we are using. As it gets warm, it will begin to melt. It is important, as with all dairy products, to keep it refrigerated.
FREEZING: It's generally not recommended to freeze Keto Whipped Cream. Freezing can alter the creamy texture, often leading to a separation of the milk fat and liquids upon thawing, resulting in a less desirable consistency. Instead, it's best enjoyed fresh or stored in the refrigerator for a short period.
Now, using the FREEZER to create this recipe or keep it chilled temporarily is another story. Chill your large mixing bowl in the freezer and once the whipped cream is made, you can keep it in the freezer for a few minutes to get it really cold. Just don't forget to take it out before it freezes.
