Sugar Free Peach Compote

- 3 peaches pitted and halved
- 4 sprigs thyme
- 4 tablespoons unsalted butter
- 1 teaspoon olive oil
- 1 teaspoon honey
- 1 squeeze lemon
- 1 pinch of kosher salt
- 1 pinch black pepper
Cooking Instructions
Preheat your grill and oil the grate to prevent sticking.
Lay the peaches cut side up and lightly coat them with olive oil, salt, and pepper.
Grill the peaches for approximately 4-5 minutes, cut side down. Then flip and grill for just 1-2 minutes on the other side. We don't want them cooked through on the grill.
While the peaches grill, melt the butter in a pan over medium-high heat.
Remove the peaches from the grill and dice.
Add the chunks of peaches to the butter along with the thyme and honey. Cook for 5-7 minutes or until the peaches soften and the sauce has thickened.
Sprinkle a bit of lemon over the peach mixture and remove the thyme stalks before serving.
This recipe works great with pork, chicken or duck! Brie and other creamy cheeses also work well with the peach compote. If you have ice cream or plain yogurt on hand, the compote tastes great when mixed.
