My wife loves this Thai Red Curry Soup recipe! It's flavorful, cheap, and you can make it in under 20 minutes. The best thing is it only has 5 g net carbs.

INGREDIENTS

Water  Coconut milk  Fish sauce  Red curry paste  Green beans  Bell pepper

Shredded pork Cilantro Green onion

STEP 1

Add water, coconut milk, fish sauce, and red curry paste together in a large bowl and cook in high heat.

STEP 2

Add the green beans when the soup comes to boil. Cook for 3 more minutes before adding the bell peppers.

STEP 3

Add the shredded pork or your choice of meat. For a vegetarian recipe, add in shredded kale or cabbage instead.

STEP 4

Reduce the heat to simmer when the soup comes back to a boil. Cook for another 10 minutes before turning off the heat and stirring in the lime juice.

STEP 5

Taste and adjust the flavors. You can add a bit more lime juice or salt depending on your taste.

STEP 6

This is optional, but you can add cilantro or sliced green onions as garnish.
