Eggs. What a wonderful ingredient! Eggs are one of my favorite foods in the world. Why? They are easy to use and forgiving at the same time. They also come in their own natural containers, which is super cool.

Good eggs also taste FANTASTIC. I mean truly wonderful. When we get back to the States, we will be working hard to find local farmers selling farm-fresh eggs. I never knew what a "good egg" was until we moved to France.

Once we moved here, I found a local vegetable market that also sells eggs. Farm fresh. My first bite = mind blown. See if you can find any near where you live. It will make a huge difference compared to commercially produced eggs.

Since the eggs are so good here, I make a lot of frittatas. One of my favorites is the broccoli cheddar frittata. I typically have a lot of sautéed broccoli made in the fridge, so all I need to do is heat up the oven and we're in business.

The flavors are simple and precise. Broccoli loves cheddar and cheddar loves broccoli. Add in the eggs, and we have the perfect breakfast, ready to go in no time flat.

How Is a Frittata Made?

There are a number of different ways to make a frittata. My favorite method is cooking the frittata in the oven. I find that with this method, the bottom layer of the egg doesn't get too thick and is leathery. Leathery frittatas are no fun.

Here are a couple different methods that you can use to make delicious frittatas:

  • Stovetop frittata: For this method, you cook the veggies first, then add in the egg mixture. Continue to cook the frittata on the stove, stirring it, until the eggs are lightly set. After that, you cover it and allow it to cook through. Simple enough, right?
  • Slow cooker frittata: First, cook the veggies in a pan and combine with the eggs, just like we do when making a baked frittata. Next, add to a slow cooker and wait. I never have the time for this or have my slow cooker ready to go, but it looks good.
  • In the oven: First, you start the frittata on the stove and then move it into the oven to finish cooking. It is simple and delicious.

With kids running around in the morning, I like to whip up my broccoli cheddar frittata in the oven without even thinking about it. It takes minutes to put together, and then it is set and forgotten.

Yes, broccoli cheddar frittata is low-carb. As for this recipe, it contains only 6 g net carbs per serving (which is half of this frittata). With such low carb content, this recipe provides a great way to start your day.

For the Sautéed Broccoli

  1. Preheat the oven to 350°F (180°C). Add all the ingredients for the broccoli to a small pan with a lid. Cover and place over high heat. Cook for five minutes, stirring occasionally. When tender and lightly browned, remove from the heat. Chop the finished broccoli mixture.

For the Broccoli Cheddar Frittata

  1. You will need an 8 or 9-inch non-stick ovenproof pan. Mix all the ingredients for the frittata EXCEPT the butter in a bowl.
  2. Heat the butter in your pan over medium-high heat. When it has melted, coat the interior of the pan with the butter. When the butter is bubbling, add in the frittata mixture. Cook until the edges start to bubble, and then move to the oven.
  3. Cook in the oven for 15 minutes. The eggs should be set. Turn the oven to broil and cook for another 3-4 minutes or until the top is golden brown. Remove from the oven and carefully invert the pan onto a plate. Cut and enjoy hot, lukewarm, or cold!

Step 1: Gather up these simple ingredients. For a thicker frittata, use 2 more eggs.

Step 2: Saute the broccoli first. Adding raw broccoli to the frittata will just not taste good.

Step 3: Make sure that you chop up the broccoli too. This way it will be incorporated into the entire frittata! Up next, toss it in the pan… cook for a couple minutes and then into the oven! Super easy.

💡 My Pro Tip

For a thicker frittata, add two more eggs. If you choose to do this, you must also add more seasoning; otherwise, the frittata will turn out bland.

If you want a more creamy consistency, add a quarter cup of heavy cream. The cream will retain the moisture of the eggs, making a more luscious frittata.

Want it to be cheesy? Add another ½ cups of cheddar. I often hold off on adding the cheddar to the raw egg mixture and wait until the frittata is almost set. Then, I add the extra cheddar on top. It is just so yummy.

How To Avoid The Frittata Sticking to The Pan?

To ensure that the frittata (most have cheese that likes to stick!) slides easily out of the pan... follow these tips:

  1. Use a good, oven-proof, non-stick pan. If everything sticks in your pan when cooking other recipes, the frittata will stick, too.
  2. Make sure that you coat the entire pan with the melted butter. I just roll it around and up the sides of the pan after it is melted.
  3. Don't scorch the bottom of the frittata. Remove it from the stove when you see the edge start to bubble!
  4. When it is done cooking, run a rubber spatula around the edges immediately to help release it from the pan.
  5. Slide out easily and enjoy!

  • In the oven: Preheat your oven (or toaster oven) to 300°F (150°C). Heat the frittata for 10-12 minutes until heated through. Note: Heating in the oven may ruin the texture of the frittata.
  • On the stove: Add the frittata to a non-stick pan. Cover and heat over medium-low heat for 6-7 minutes or until heated through.
  • In the microwave: Heat on medium power for 3-4 minutes or until hot. Note: This may result in a rubbery texture.

Note: I would not recommend freezing a frittata as it can affect the texture of the eggs.

Nope. They are not. Simply put, a frittata is made without a crust. A quiche has a pastry crust.

You can tell when the frittata is done by pressing your finger lightly in the center. If liquid is present or it feels like jelly, it is not finished cooking. If it springs back lightly under your finger, it is ready to eat.

If you are cooking on the stove, use a special skillet for frittata recipes, which comes with a top and bottom in a set. This makes flipping the frittata much easier. When cooking the baked broccoli frittata in the oven, it is best to use a non-stick oven-proof pan with a metal handle. Plastic is never a good idea in the oven.
