Absolutely- this is a great method. When I use my cast iron pan, I cover it with a lid to increase the temperature inside the pan. You have to remember that the pork needs to be cooked through! After searing on one side, I flip, sear the other and into a 400f oven until cooked through.

On the recipe is it teaspoon or tablespoon of the spices? I used Tablespoon of the cumin. Then after it was in thought oh my maybe that was supposed to be teaspoon. Regardless they turned out amazing so I kept the tablespoon of cumin! And I also only used one pound of ground pork. I’m making for the third time today and my son will smoke them! Can’t wait!
