- 12-15 leaves of fresh mint
- 2 tablespoons olive oil
- 1 cucumber sliced
- 1 tablespoon apple cider vinegar
- ½ shallot sliced finely
- ½ cup feta cheese
- ½ teaspoon dried oregano
- ¼ teaspoon kosher salt
- ¼ teaspoon fresh cracked black pepper

- Cut the cucumber into manageable lengths, then halve lengthwise.
- Remove the seeds from the cucumber sections with a spoon and discard.
- Slice the cucumber and peeled shallot thinly. Use a mandolin to get evenly thin slices.
- Add the sliced cucumber and shallot to a bowl.
- Crumble the feta cheese and add it to the bowl. Add the dried oregano, kosher salt, and fresh cracked pepper.
- Add the apple cider vinegar and olive oil.
