I prefer using a ceramic mandoline to slice the cucumber as it does a better job than most knives. Its only downside is that it is dangerous. I don't even let my kids touch it, and I've been working with them in the kitchen for years. If you are not familiar with the tool use a vegetable peeler. It works great. Another fantastic option is a spiralizer on the flat disc rather than the noodle disk.
