  • Poached eggs: For many people, poaching eggs is difficult and somewhat intimidating too. This recipe works great with a sunny-side-up egg as well. I like to use an egg mold so it fits perfectly on the English muffin! 
  • Arugula: this is an optional ingredient, but once I tried eggs Benedict with this spicy lettuce added, I've never gone back to the traditional recipe.

Additional Ingredients

  • Alternate Proteins: try some smoked salmon in the place of the Canadian bacon. Or, if you're looking for a vegetarian option, add some sauteed spinach or a small grilled portobello mushroom. Yum.
  • Garnishes: you can garnish this dish with thinly slice avocado (it pairs so well with the hollandaise sauce!) and a drizzle of sriracha. Really good combo. Try adding some dill or tarragon on top. Got some leftover asparagus? It tastes amazing on this dish. Let your imagination take over.

This recipe is truly an assembly recipe. I've assumed that you have made the keto English muffins and the blender hollandaise and have some poached eggs ready to go.

Instructions:

  1. Slice the keto English muffins in half. Toast and butter, if you would like.
  2. Place some of the arugula on the split English muffin.
  3. Lay a piece of the browned Canadian bacon on top of the arugula.
  4. Place a poached egg on top of the Canadian bacon.
  5. Drizzle the blender hollandaise sauce over everything. Apply liberally.
  6. Top with chopped chives.
  7. Dig in and enjoy.
