Sun Dried Tomato Vinaigrette Ingredient List
To make this flavor-packed sun-dried tomato vinaigrette dressing you will need the following ingredients:
- ⅔ cup olive oil
- ½ cup sun-dried tomatoes, packed in oil
- ¼ cup apple cider vinegar
- 2 cloves roasted garlic
- 1 tablespoon Parmesan cheese, shredded
- 1 teaspoon Dijon mustard
- 1 teaspoon dried Italian herb seasoning
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
Ingredient Substitutions
Swap any of the ingredients you are missing with these excellent alternatives:
- Oil-packed sun-dried tomatoes: Go for dry sundried tomatoes. Just avoid anything that adds sugar. If you use dry tomatoes, you must adjust the oil quantity as the tomatoes will absorb a lot of it to rehydrate.
- Apple cider vinegar: Red or white wine vinegar are great alternatives. Avoid using balsamic vinegar as it changes the flavor profile.
- Olive oil: Avocado oil is a fine substitute.
- Roasted garlic: ½ clove fresh garlic will give you a similar savory aroma.
- Dijon mustard: Brown mustard works fine. Do NOT use yellow mustard.
- Italian herb seasoning: Make homemade Italian seasoning by mixing an equal amount of dried oregano, basil leaves, thyme, and rosemary. Use only 1 teaspoon of your homemade Italian seasoning.
Ingredient Additions
I love to take the flavors of my homemade salad dressing over the top with extra ingredients like:
- Sweetness: Add ½ teaspoon of a low-carb sweetener like monk fruit sweetener, stevia, or erythritol to satisfy your sweet tooth.
- Fresh herbs: Add finely chopped fresh basil, oregano, or even Italian parsley for extra aromatics.
- Heat: Give the dressing a good kick with ¼ teaspoon of red pepper flakes.
- Olives: Add some finely chopped and pitted black or kalamata olives for more richness.
- Thickener: To thicken this sauce, add a tablespoon of almond flour. It will absorb some of the oil and add a nice , nutty flavor.
- Citrus: A squeeze of lemon or some lemon zest will brighten the dressing.

Preparation Steps

- Blend until the mixture is roughly chopped and combined.
- Slowly add the olive oil while blending to emulsify the mixture.
- Add the shredded Parmesan cheese and stir.
Note: I used a Nutribullet for this recipe. You can also use it for convenience. However, remember that the dressing will stay emulsified longer if you follow the steps above.
Step 1: Combine ingredients in a blender or food processor.
Step 2: Blend until the mixture is roughly chopped and combined. Add olive oil to emulsify the mixture.
💡 My Pro Tip
Emulsification is the key to this recipe's longevity. The vinaigrette will separate if prepared using the all-in-one Nutribullet step. I don't mind the Nutribullet method because we often eat the dressing immediately. If you need the vinaigrette to sit without separating, it is crucial to start by pulsing a few times to break down the larger pieces of sun-dried tomatoes before adding all the other ingredients except for the oil. While the processor or blender is running, drizzle in the olive oil gradually. This will create an emulsification that will help keep the dressing from separating.
⏲️ Time-Saving Tips
- Make roasted garlic ahead, or cook a raw garlic clove in about 1 tablespoon of olive oil over low heat to reduce some of the raw garlic edges.
- Double the recipe and store it in the fridge to conveniently enjoy various foods.
- Use an immersion blender. It works better than a Nutribullet, food processor, or blender! Plus, It saves cleanup time and is super fast. Place the ingredients in the jar, and you'll store the dressing and immersion blend right in the jar.

Sun-dried tomato vinaigrette can be stored in the fridge for up to 2 weeks. Transfer any leftover dressing to an airtight container and store it in the refrigerator. Do not leave it on the counter.
Note: Do not freeze the sun-dried tomato vinaigrette, as freezing will disrupt emulsification and alter its texture and consistency.
