Since that night, I've been experimenting with different ingredients to achieve similar flavors, and this recipe is a surefire hit.

Creating this chipotle mayo sauce recipe is like making mayonnaise from scratch. We will use an immersion blender, and the carafe (or beaker) that came with it is a crucial requirement for the recipe. The carafe is slender and tall. Why? The immersion blender will push all the ingredients to the side without emulsion. It’s a spinning blade, so this happens through centrifugal force.

We also need the eggs at the bottom before adding all the ingredients. Why? When we start the immersion blender, we want the egg to emulsify first. When emulsification starts, a mayonnaise-like substance forms at the bottom of the carafe. You can gently massage the immersion blender inside the carafe once you notice it. The aioli will form quickly. If it is too thin, add more oil. If it is too thick, add a little water.

    Have you ever thought about using real chipotle peppers, grinding them down with a mortar and pestle? Would this work? I have a ton of dried chipotle peppers and have no idea what to do with them. Any thoughts?

    1. Hi Jennifer:
      Chipotle peppers are jalapeños which have been smoked until they are dried. Typically they are leathery and pliable, so it would be difficult to do with a mortar and pestle. My suggestion would be to use a high powered blender but make sure you keep the lid on- the airborne pepper dust will be an irritant. Or you could put a couple in a food processor with a little water, make a chipotle paste, then add in chopped tomato, onion and cilantro for a super flavorful salsa. Hope this helps.

    I'll have to make two versions of the chipotle aioli recipe. One with the spice (me) and one without (hubby)! I love aioli and make it once every two months. I'll have to make your version since it looks scrumptious!
